
Ugly Duck - Grape Paste
We crafted the Grape and Bay paste after receiving a desperate phone call from a vineyard in the Scenic Rim, QLD. Due to wet weather conditions their wine grapes did not develop high enough sugar levels to turn into a good drop - and they asked if I could save their harvest. To add even more pressure, the grapes were already being harvested and we had no time to loose. I managed to developed the recipe within 7 days and we cooked up a storm.
Grape and Bay fruit pastes is particularly nice with creamy Brie and on top of cooked halloumi.
